To prevent chemical and physical interactions and maintain the biological, functional, and physicochemical qualities of core materials, microencapsulation is the process of creating a functional barrier between the core and wall material. Different techniques, such as emulsification, spray-drying, extrusion, freeze-drying, coacervation, in situ polymerization, melt-extrusion, supercritical fluid technology, and fluidized-bed coating, have been used to conduct and commercialize the microencapsulation of vitamins, elements, essential oils, and probiotics. For the proper microencapsulation method and wall material must be chosen based on the product's intended application and the processing circumstances. The benefits of microencapsulation have created new possibilities that could transform the manufacturing of dairy products. The current book examines a developing pattern and a few potential uses for the encapsulation technique in dairy products.
